I think fans can be categorized into:
1. Fans who don't know about the sport and just want something to do.
2. Fans who cheer for their school no matter what, but don't care about the intricacies of the game/roster/coaching.
3. Fans who want to know in-depth about teams/coaches/roster/school culture.
I'm obviously at No. 3 but I'd guess there are more in the first two categories, and nothing wrong with that.

I've even had incidences here where I'll only hear about an injury from a forum user who has an in with the program and they'll message me, sometimes in confidence.
Unfortunately I have seen this a lot, especially at lower levels. There isn't a real incentive for athletic departments to communicate these issues to the public, so they don't. Some athletics departments may not have the staff for it as well. You even see it with some smaller D1 schools too. I posted it in another thread last week - my alma mater's athletic department has gone from being extremely active with communication to doing barely the minimum after making the move to D1...I think it should be the opposite! As you mentioned, there may be privacy concerns and possible issues with sharing of student information (as a teacher, I'm told to be really careful with what I share and to who I share it with), but I can't tell you if that relates to sports injuries since I teach at a college that doesn't have athletics.

Pitt will announce who is hurt, but only if they are not playing that day and only on the radio right before kickoff.

Maybe it's Big Paycheck Syndrome. Look at what happened to Prescott, Rodgers, Aiyuk, and many others once the mega bucks started rolling in.

Technically, a roster is in violation of HIPPA. How dare we put age, class, height and weight and hand it out to the public.

Actually, yes, I do.
And, I agree with you 100%. I disagree with how all professional athletes are paid. Same as I do lousy lawyers and crappy CPA's.

The NCAA doesn't have standardized injury reports because of student-athlete privacy, potential impacts on student well-being, and the legal complexities of HIPAA and state laws governing health information disclosure. However, because of the $$$ now involved, including legalized betting, many are screaming for injury reports. Conferences like the Big Ten and SEC are beginning to implement their own mandatory injury reports to address these concerns.
Here is rhe SEC's.....

The entire reason the big leagues do it is to prevent insider betting. If everyone has the information, it just eliminates that problem. To my knowledge, the NFL started this in the 40's because of betting scandals, then everyone jumped on.
Unless someone starts betting on Lone Star Conference football, there really isn't a need.
Which one of you degens is betting on LSC football?
